The Perfect Poached Egg

INSTRUCTIONS

To start, crack the Egg into a vessel of your choice, a mug, ramakin etc, this will make it easy to drop into the water.

Take a saucepan, and fill it with water.

Bring the Water to a “shimmer” so just short of simmering, we don’t want any bubbles, but a gentle shimmering to the water.

Swirl the water vigorously with a wooden spoon, or whatever you have, We want to create a vortex, or strong swirling.

Allow the vortex to calm down so it is just a steady swirl, then gently drop in the Egg.

The Egg will take 3 minutes to poach.

While you wait, take a serving spoon, preferably with holes or slats in so the water will drain.

Also, take a dry clean Tea towel.

After 3 minutes, gently remove the Egg and you can give it a gently prod with your finger to check if the white feels firm but the yoke should be very soft and almost springy.

Lay the Egg on the tea towel and very gently pat it dry.

Season the Egg with Salt and Pepper, and serve.
