Italian Mashed Potato

INGREDIENTS

Maris Piper Potatoes

Butter

Milk

Pancetta

Mascarpone Cheese

Parmesan Cheese

 INSTRUCTIONS

To make enough Mashed Potato to serve between 7-10 people, take 1.5kg of Maris piper Potatoes, peel, and cut into inch sized cubes.

Boil the Potatoes for around 10 minutes until they start to get soft, but don’t let them get mushy.

Drain the Potatoes and give them a mashing up in the pan.

Leave the mashed Potatoes for 10 minutes to allow the water to evaporate.

Very quickly dice a small handful of chives as fine as you can.

At this point, take a frying pan, add 130g of diced Pancetta, and fry on a medium heat until crispy.

Remove a third of the Pancetta, and the rest pop into the pan with the Mashed Potato.

Place the Mash on a low to medium heat.

Add 2 Tbsp of Butter and about 70ml of Milk.

Stir the Mash thoroughly, then add 2 Tbsp of Mascarpone Cheese, and grate in 70g of Parmesan Cheese.

Season with Salt, stir, and adjust the consistency with any more Milk.

Add some of the Mash to a plate, sprinkle over some of the crispy Pancetta and chives.

Finish with a grating of the Parmesan Cheese, and serve.
