Focaccia Sandwich
INGREDIENTS
Focaccia Bread
Fresh Basil
Garlic
Cherry Tomatoes
Balsamic Vinegar
Burrata Cheese
Parmesan Cheese
Pancetta
Cured Meats
INSTRUCTIONS
To make 4 Focaccia Sandwich’s, add 130g of Pancetta to a pan, set to medium.
Add a generous amount of freshly ground black Pepper, and fry until crispy.
Remove the Pancetta once crispy, but leave in the fat.
Throw in around 250g of Cherry Tomatoes.
At this point finely dice 3-4 cloves of Garlic and add to the pan once the Tomatoes have started to break down.
Cook for another 3 minutes, then season, add a splash of Balsamic Vinegar, and reduce to a syrup.
Place the Tomatoes in a bowl, and take enough Focaccia to serve 4.
Cut the Focaccia into quarters, add a layer of fresh Basil leaves.
Next, a layer of cured Meat, Coppa, Salami Milano etc.
Place on a good spoonful of Burrata Cheese, then spoon over some of the Tomatoes along with the cooking juice.
Spoon over some of the crispy Pancetta, season, and add a few more Basil leaves.
Finish with a good grating of Parmesan.
Pop the lid on the Sandwich, and serve.
