Tomato Ketchup
INGREDIENTS (for 2-5 people)
2-3 Onions
1kg Mixed Tomatoes
1-2 Tbsp Tomato Paste
600g Passata
Stick of Cinnamon
2-3 Allspice
5-6 Cloves
1-2 Tbsp Honey
2 Tbsp Apple Cider Vinegar
INSTRUCTIONS
Start by dicing up the Onions.
Pop a high walled frying pan on a medium heat and add a splash of Olive Oil.
Chuck the Onions in the pan, season and fry them off until they start to caramelise.
Pop in a stick of Cinnamon, 2-3 Allspice and 5-6 Cloves.
Chop the mixed Tomatoes fairly small.
Once the Onions are nicely caramelised add 2 Tbsp of Honey and fry off for another minute or 2.
Add 2 Tbsp of Tomato paste and fry for 2 minutes before throwing in the mixed Tomatoes and the Passata.
Season to taste and cook the Sauce out for around 20 minutes, then mash with a hand masher.
Pass the Sauce through a sieve and reduce to the consistency you want.
