Asparagus, Bacon & Hollandaise Sauce
INGREDIENTS
Asparagus
Streaky Bacon
6-7 Eggs
2 Tbsp of Butter
2-3 Tbsp White Wine Vinegar
1 Lemon
INSTRUCTIONS
Pop a frying pan on the hob and lay in the Bacon.
Fry off the Bacon until it is nice and crispy.
Remove the Bacon from the pan but leave in the rendered fat.
Take a large glass mixing bowl and add 5-6 Egg yokes.
Gently melt 4-5 Tbsp of Butter in a Sauce pan.
Place a Sauce pan of simmering water on a medium hob, place on the mixing bowl and start to whisk the Yokes.
Once the yokes start getting creamy and lighter in colour start slowly pouring in a few drops of Butter as you whisk.
You will need to add around 4-5 Tbsp of the melted Butter.
Once the Sauce starts to thicken add a couple of Tbsp of White Wine Vinegar and continue to whisk.
To finish the Hollandaise Sauce, season, and add a good squeeze of Lemon juice.
Pop the frying pan containing the Bacon fat back on the hob and turn the heat between medium and high.
Add a Tsp of Butter and lay in the Asparagus.
Season the Asparagus and roast for around 2-3 minutes until it starts to char.
Place the Asparagus onto a plate, drizzle over the Hollandaise Sauce and roughly chop up the crispy Bacon into small pieces.
Scatter over the Bacon pieces and serve.
