Tuna Salad Roll

INGREDIENTS

150g Can Tuna
Soft white Bread Rolls
Bell Pepper
Tin of Sweet Corn
1 Chilli
1 Carrot
4-5 small Gherkins
1-2 Spring Onions
1 Baby gem Lettuce
Handful Spinach
1 Lemon
1-2 Tbsp Mayonnaise
1-2 Tbsp Dijon Mustard

INSTRUCTIONS

Empty the can of Tuna into a large mixing bowl.
Dice up the bell Pepper and add a handful to the Tuna (we want the same amount of all of the ingredients)
Thinly slice your Chillies and add to the bowl.
Grate in the Carrot.
Dice up the Gherkins the same size as the Peppers and add to the bowl.
Add the sweet corn to the Tuna.
Slice the spring Onions the same size as the Peppers and Gherkin and throw in the bowl.
Take a small handful of the Spinach and dice up fairly fine, then do the same with the Lettuce.
Chuck the Lettuce and Spinach into the bowl and add 2 table spoons of Mayo and a tablespoon of your Dijon Mustard.
Cut off a couple of slices of Lemon and squeeze into the Salad and give everything a good mix through.
Cut your Bread Rolls in half and remove a small amount of the centre to create a well leaving more room for the Tuna.
Fill the Rolls with a few table spoons of the filling and serve.
