Nduja, Mascarpone & Lemon Tagliatelle

INGREDIENTS (serves 2-3 people)

250g dried Tagliatelle
1 Tbsp Nduja paste
2 Tbsp Mascarpone
1 Lemon
40-60g Parmesan
Handful fresh Parsley
Handful fresh Basil


INSTRUCTIONS

Bring a pan of water to the boil and heavily season (as salty as the sea)
Chuck in your dried Tagliatelle and cook for 2 minutes less than the cooking time on the packet.
Once it's cooked, drain the pasta, but retain some of the water, and pop the Pasta into a frying pan.
Pop a tablespoon of the Nduja paste into the pan and mix through, then 2 table spoons of the Mascarpone.
Grate in a generous amount of the Parmesan and give the Pasta and sauce and good mix.
Cut off a couple of slices of the Lemon and finely dice the Parsley and Basil.
Add a splash of the Pasta water and mix into the sauce.
Add a good squeeze of the Lemon juice along with a handful of Parsley and a handful of the Basil.
Mix everything together and toss the Pasta in the sauce.
Season to taste, and serve.
