The Juicy Lucy Burger
INGREDIENTS
20% Fat ground Beef
Burger Cheese slices
Extra mature Cheddar Cheese
Onions
Whisky
Honey
Brioche Burger Buns
Butter
White Wine Vinegar
INSTRUCTIONS
Take 3 large Onions and fairly thinly slice.
Then, take a frying pan, add a plash of Olive Oil and pop in the Onions.
Make sure you keep the heat set to medium.
Season the Onions, and start by sweating them down until really soft and they will have reduced by about 2 thirds.
While the Onions cook, take the Beef and gently massage in a bowl, but don’t compress it too much.
Next, take a sheet of grease proof paper and add a small handful of the Beef.
Gently flatten out the Beef so it is circular and really thin, make it about a third bigger than the size of the Burger bun.
Repeat, so you have 2 big thin Patty’s.
Then, grate a small handful of extra mature Cheddar in to the centre of the Patty, and tear in a slice of the Burger Cheese.
Make sure the Cheese sits in the middle of the Patty with a large border, then lay over the second Patty and pinch the sides sealing in the Cheese.
Next, you need to gently massage the Patty using the paper until it is around 1-2 cm thick and flat on both sides, we don’t want it to bulge out in the middle.
T this point, add a few good knobs of butter to the Onions, turn up the heat a touch, and start to caramelise the Onions.
Once the Onions are golden brown and perfectly caramelised add a good Tbsp of Honey, stir, then deglaze with a decent shot or 2 of the Whisky.
Burn off the alcohol, reduce the Whisky to a syrup, then finish with a small splash of White Wine Vinegar.
Set the Onions to one side, take another pan and add a generous knob of Butter.
then, lay in the Burger buns and toast until golden brown.
Remove the Buns and wipe out the pan to clean.
Turn the heat up high, season the Patty and lay it into the pan.
Make sure you leave the Patty to cook on one side for around a minute to caramelise, flip, and another minute on the other side.
Then, keep flipping every 20 seconds for another 3 minutes until the Patty is beautifully seared and the Cheese will be melted and gooey inside.
Lay the Burger bun on a plate, lay on the Patty and finish with a good spoon of the Onions and serve.
