Spicy Onion Jam Sausage Rolls

INGREDIENTS

Puff Pastry

Sausage’s

Red Onion’s

Fresh Chillies

Fennel Seeds

Nutmeg

Smoked Paprika

Balsamic Vinegar

Sugar

INSTRUCTIONS

To make a large Sausage Roll that will have 5-7 portions take 2-3 large red Onions, 2-3 fresh Chillies, and dice them up fairly finely.

Add a splash of Olive Oil to a pan and pop in the Onions and Chilli.

Cook these down until they are nice and soft, with a slight touch of colour.

Then add enough Sugar to cover the Onions and caramelise.

Deglaze with Balsamic Vinegar and reduce to a syrup.

Pour the Jam out into a bowl and leave to cool.

Pre heat the oven to 180 degree’s.

Take a large mixing bowl, remove the skin’s from 6-8 Sausages and place the meat in the bowl.

Grate in half of a whole Nutmeg, 2 Tsp of Smoked Paprika and a good pinch of Fennel Seeds.

Season the Sausage mix and add the Onion and Chilli Jam.

Mix the Sausage Roll mix with your hands.

Then, make a quick egg wash by beating an Egg into a bowl with a folk.

Lay out the Pastry and add the Sausage mix.

Massage the Sausage mix into the thickness you wish, then brush one side of the Pastry in the egg wash, fold over, and roll out into a Sausage roll.

Brush the Sausage roll with Egg wash, and sprinkle over some Fennel Seeds and some course Sea Salt.

Place the Sausage Roll in the oven and bake for around 30 minutes, or until the Pastry is puffed up and golden brown.

Remove the Sausage Roll and eat hot or cold.
