For 2-3 Sandwich’s, start by placing a Dutch oven on a medium heat, and adding a Tbsp of Butter.

Once the Butter melts, add a Tbsp of plain Flour and stirring as you cook out the Flour until you have a paste.

Then slowly add Milk, a small splash at a time as you stir until you have a thick white sauce.

Then, grate around 100g of Cheddar Cheese into a bowl, along with 100g of Gruyere.

Then, 100g of Pecorino Romano.

Add 2 thirds of the Cheese to the Sauce along with 2 heaped Tsp of Dijon Mustard and stir through.

Next, take a few thick slices of your Bread, lay on some Ham and spoon on some of the Cheese Sauce.

Finish, with a handful of the remaining Cheese and pop on the lid.

Place a frying pan on a medium heat and throw in a knob of Butter.

Once the Butter melts, lay in the Sandwich and turn every 30 seconds until the Cheese is melted and the Bread is golden brown and toasted.

Place the Sandwich on a chopping board, cut in half and serve.
