Spicy Onion, Goats Cheese & Bacon Tart

To serve between 3-5 people

INGREDIENTS

Red Onions - 3-4 medium

Chillies - 2-3 fresh Chillies

Goats Cheese - 130g

puff Pastry - 320g

Egg - 1 Large

Smoked Streaky Bacon - 3 rashers

Honey - 1-2 Tbsp

Thyme - a small pinch

Balsamic Vinegar - 3-4 Tbsp

 INSTRUCTIONS

1. Lay the Bacon into a frying pan, and fry until crispy.

2. While the Bacon cooks, slice up the red Onion and chilli.

3. Once the Bacon is crispy, remove it from the pan, but leave in the Bacon fat, and throw in the Onion.

4. Season, and after 2 minutes add the Chilli and cook these down until soft and sweet.

5. Add 2 Tbsp of Honey and caramelise.

6. Then, deglaze the pan with some Balsamic Vinegar, around 3-4 Tbsp.

5. Reduce down the Balsamic until it is syrupy, then add some fresh thyme.

6. Stir, then pour the spicy Onions out into a bowl and place to one side.

7. Crack the Egg into a bowl, beat with a folk into an Egg wash, and set aside.

8. Roll the Pastry out onto a baking tray

9. Cut the pastry into equal sized squares and fold over the edges to create a border.

10. Brush the borders in the Egg wash and add a sprinkle of sea salt.

11. Place the Pastry in the oven for around 10 minutes, until it starts to get lightly brown and puffed up.

12. Then, add the Onions and bake for another 5 minutes.

13. Cut the Bacon into little pieces

14. Then, break up and sprinkle over the Goats Cheese and Bacon pieces.

15. Bake for another 3 minutes for the Cheese to lightly melt.

16. Remove the Tarts, and serve.
