Orange & Honey glazed Salmon
INGREDIENTS
Salmon Fillets
Oranges
Soy Sauce
Honey
Garlic
Chives
Parsley
Butter
INSTRUCTIONS
To make 2 portions, finely dice up 2-3 cloves of Garlic.
Then, finely dice some Chives and pop in a bowl, finely dice some Parsley and place in another bowl.
Next, take 2-3 Oranges, juice 2 into a bowl, and thinly slice the third orange.
Then, take 2 frying pans, pop one on a good medium heat and add a knob of Butter.
Pop in the Garlic and sweat down for a few minutes.
Lay in 4-6 slices of the Orange, turn once or twice before adding a splash of Soy Sauce.
Then, about 4-5 Tbsp of the Honey and caramelise.
Turn up the heat a touch and slowly start adding a splash of Orange juice every few seconds, as you reduce, until you have a lovely sticky glaze.
Season with Salt and Pepper.
Then, finish the Glaze with a good sprinkle of the Parsley and pop it to one side.
Place the other pan on a decent medium heat.
Add a generous amount of Olive Oil, and a good knob of Butter, we want to almost shallow fry the Salmon.
Lightly season the Salmon, and as soon as the Butter has melted into the Oil and it is gently sizzling, lay in the Salmon, skin side down.
Fry the Salmon on the skin for a minute and a half, then turn on one side for 30 seconds, then the other side.
Turn the Salmon onto the top, skin facing up, for 30 seconds, then back on the skin side for 1 last minute.
Then, turn the Salmon every 10 seconds, for another minute, to get a light crispiness to the flesh, but the Salmon will be juicy and tender.
At this point, re heat the glaze and cut it with a few Tbsp of the Fish cooking Oil.
Lay the Salmon Fillets on a plate, along with a few slices of the Orange, and coat them in the glaze.
Finish with a good sprinkle of Chives, and serve.
