To make 2-4 Pancakes, take between 4-6 Apples, and cut them into cubes.
Add a knob of Butter to a pan, pop in the Apples, and lightly season with a small pinch of Salt.
Cook the Apples until they start to get soft, add a couple of Tbsp of Honey and caramelise.
Deglaze with Brandy, and reduce to a sticky Syrup.
Pop the Apples to one side to re heat when needed.
Next, take a large mixing bowl, and add 3-4 Bananas.
Mash up the Banana, add 3-4 Eggs and continue to mash until you have a Batter.
Pop a pan on a low medium heat and add a knob of Butter.
Once the Butter has melted and is lightly sizzling add enough Batter to just cover the bottom of the pan.
Cook the Pancake for a few minutes before gently shaking the pan to make sure it has come loose.
Then, very gently lift up one side to make sure it is lightly browning, then turn the pancake out using a plate, DO NOT FLIP! the Pancake can break up easily.
Quickly re heat the Apples.
Cook the other side until Lightly brown, then slide out the Pancake onto a plate.
Finish with some of the Apples, drizzle with Honey, a dollop of Clotted Cream and serve.
