Masala Chai

INGREDIENTS

Assam Tea

Cardamom pods

Cinnamon

Cloves

All spice

Fennel seeds

Full fat Milk

INSTRUCTIONS

Firstly take a pestle and mortar and add a pinch of Fennel seeds, 3/5 Cardamom pods, 5/7 Cloves and 2/4 All spice.

Gently crush and grind the spices, but not too much, we want them crushed, but not ground to a dust.

Pop a saucepan on the hob, turn the heat down low and add the spices.

Break a stick of Cinnamon in half, and chuck it in the pan.

Toast the spices for around 30 seconds until they become beautiful and fragrant.

Pour in some boiling Water and turn the heat up high.

Bring the Water back up to the boil and then add 2 Tsp of Loose leaf Assam Tea.

Stir the Tea as you brew for 3/5 minutes.

Once the Water is dark, and perfectly brewed, pour in a splash of Milk and stir.

Adjust with more Milk if you need, the darker the stronger the Tea, and the lighter, the creamier.

Bring the Tea up to heat while you stir until it becomes slightly foamy and steaming.

When ready, pass the Tea through a sieve, and serve.
