Chimichurri

INGREDIENTS

Coriander

Parsley

Dried Oregano

Red Onion

Chilli flakes

Extra virgin Olive Oil

Red Wine Vinegar

Lemon

INSTRUCTIONS

Take a good handful of Coriander, remove the big stems.

Then a handful of flat leaf Parsley.

Finely dice up the herbs and pop into a bowl.

Add a good pinch of dried Oregano and another pinch of Chilli flakes.

Then, take a red Onion, remove the skin, and finely dice half of the Onion.

Add the Onion, Zest in a Lemon and add a squeeze of the juice.

Season with Salt and Pepper.

Add extra virgin Olive oil to cover the herbs but not too much.

Mix the ingredients thoroughly and add 2 Tbsp of red Wine Vinegar.

Give the Chimichurri and good mix, taste for seasoning and make any adjustments to perfect.

Once your happy with the dressing, serve.
