Chorizo & Bone Marrow Burger
INGREDIENTS
Chorizo
Bone Marrow
18% fat ground Beef
Brioche Burger Bun’s
Chipotle Paste
Mayonnaise
Lemon
INSTRUCTIONS
First to make the Chipotle Mayo, add equal parts Chipotle paste and Mayo to a bowl, squeeze in some Lemon juice, season, and mix.
Place 2’ 6-8 inch long Marrow bones into a pre heated oven on 180 degrees.
Roast the bones for 15 - 20 minutes, then scrape out the Marrow, and mash it up.
Next, grate 200g of Chorizo into a bowl and add 200g of 18% fat ground Beef.
Pop in the Bone Marrow, and massage the ingredients together, but try not to compress the Burger mix too much.
Then, Shape some Burger Patty’s around half an inch think, and a little bigger than the Burger Buns.
Place a frying pan on the hob, turn the heat to medium, and add a generous knob of Butter.
Lay in the Brioche Burger Bun’s and toast.
Remove the Bun’s, and clean out the pan.
Turn the heat up high, season the Patty’s, and place them in the pan.
Fry off the Burger’s for a minute on each side to get a good crust, then turn every 30 seconds for between 2-3 minutes.
Add the Patty’s to the Bun’s, drizzle on some of the Chipotle Mayo, and serve.
