Chilli Beef Wrap

INGREDIENTS (makes 4-6 wraps)

Tortilla Wraps
400g Beef mince
3 Chillies
Thumb sized chunk of Ginger
3 cloves Garlic
1 - 2 Tbsp Honey
2 Tbsp Soy sauce
Handful of Peanuts
1 baby gem Lettuce 
3 - 4 Spring Onions
1 medium Carrot 
1 Lemon


INSTRUCTIONS

Pop a frying pan on the hob, add a splash of Olive Oil and turn the heat up high.
Chuck in your Beef mince.
Dice up the Chillies and throw them into the pan once mince starts to brown.
Finely dice up the Ginger and Garlic and throw in the pan.
Fry until the Beef is crispy and the Chilli, Garlic and Ginger is caramelised.
Add 1 - 2 Tbsp of the Soy Sauce and reduce.
Add 1 - 2 Tbsp of Honey and stir through.
Roughly dice up the Lettuce and Spring Onions and pop in a mixing bowl.
Grate in the Carrot and zest of a whole Lemon.
Add the juice of the Lemon and toss the Salad.
Take a Tortilla wrap and add a handful of the Salad.
Spoon over some of the Beef, be generous.
Pop your Peanuts into a Pestle & Mortar and grind coarsely.
Sprinkle over the Peanuts, then Wrap your Wrap.
