Wild Garlic Butter

INGREDIENTS

Wild Garlic

Unsalted Butter

Lemon

INSTRUCTIONS

Take a large bunch of Wild Garlic, wash it thoroughly or blanche for 30 seconds.

Squeeze out the excess water and roughly chop.

Take a blender and pop in around 100g of Butter, and a handful of the Wild Garlic.

Blend for around 30 seconds then taste the Butter, you can have the Butter stronger or milder so adjust it to your taste.

Season the Butter and add a tiny squeeze of Lemon.

Blend for another minute until it is really smooth and thick, give the Butter a quick taste, and adjust with any more Butter or Wild Garlic depending on how strong you would like it.

Adjust the seasoning, blend for another minute and from there you can use immediately, leave the Butter to set in the fridge, or store in the freezer for later use.
