Chorizo Sausage Rolls
INGREDIENTS
Chorizo
Sausage
Smoked Paprika
Fennel seeds
Nutmeg
Puff Pastry
Egg
INSTRUCTIONS
Grate 250g of Chorizo into a mixing bowl.
Add 200g of Sausage meat after removing then skins.
Season the meat with Salt and black Pepper.
Add a good pinch of Fennel seeds and grate in half of a whole Nutmeg.
Add a heaped Tsp of smoked Paprika.
Turn on the oven and pre heat to 180 degrees.
Use your hands to massage and mix the meat into a delicious Sausage roll mix.
Pop the filling to one side, and make an Egg wash by beating a free range Egg in a bowl with a fork.
Lay out the puff Pastry and pop on the Chorizo and Sausage roll filling.
Massage the filling into a long roll on top of the Pastry.
Cut off any extra Pastry and fold over one side, brush the other side in Egg wash and fold over the Pastry.
Roll the Pastry and gently shape it into a roll.
Brush the Sausage roll in the Egg wash and sprinkle with Fennel seeds and sea Salt.
Bake the Sausage roll in the oven for around 30 minutes until the Pastry is golden brown, puffed up and flaky.
Remove the Sausage roll, and serve, hot or cold.
