Roasted Shallots

INGREDIENTS

Shallots

Brandy

Honey

Chives

INSTRUCTIONS

Pre heat the oven to 180 degrees.

Take a few large Shallots, chop them in half and remove the skins.

Pop a frying pan on the hob and add a little dash of Olive Oil.

Turn the heat up high and lay in the Shallots in flat side down.

Fry the Shallots until you have a lovely dark char on the flat side, turn them and give them a few minutes on the other side.

Place the pan in the oven, leave it for 5 minutes then add a knob of Butter.

Roast the Shallots for around 30 minutes, until they are dark and beautifully soft.

After half an hour, remove the pan and place it back on the hob on a medium heat.

Season the Shallots, add a good drizzle of Honey and deglaze with a glug of Brandy.

Reduce the Brandy to a syrup and serve with a sprinkle of fresh Chives.
