Patty Melt

INGREDIENTS

Beef (18% Fat)

Bread

Red Onion

Chillies

Sugar

Balsamic Vinegar

Cheddar Cheese

Goats Cheese

INSTRUCTIONS

Take 3-4 Red Onions and fairly thinly slice, then, slice up 3 Chillies.

Pop the Onion and Chilli into a pan set to medium, add a drizzle of Olive Oil and season.

Cook these out until they start to caramelised, then sprinkle in sugar, around 2-3 Tsp and caramelise.

Next, add a splash of Balsamic Vinegar and reduce to a syrup.

Pop the Onions and Chilli to one side and we can make our Burger Patty’s.

Take some 18% fat Beef mince, around 200g will make between 4-7 Burgers depending on the size, and massage the mince together, but don’t compress it too much.

Then, taking a small handful at a time, flatten out as many Burger Patty’s as you need, I usually make them around 1-2cm thick.

Next, take your Bread of choice and slice around the same thickness as the Patty.

Quickly grate some extra mature Cheddar Cheese into a bowl.

Butter both sides of the Bread and lay into a frying pan on a low heat to toast, ideally you want a pan with a lid.

Once the bread is toasted, remove from the pan turn the heat up high and lay in the Burger Patty’s.

Fry on one side for a minute, flip and repeat, then, spoon over some of the Onion and Chilli and top with a heap of the Cheddar.

Pop a lid on the pan and allow the Cheese to melt.

At this point, add some Goats Cheese to one side of the Bread.

Once the Cheddar has melted pop the Patty onto the bread and stick on the lid.

Gently compress the Sandwich and flip until the Bread is perfectly toasted and golden brown

Remove the Patty melt, and serve.
