Italian Chopped Sandwich

INGREDIENTS

Baby gem Lettuce

Spinach

Spring Onion

Pepper

Olives

Jalapenos

Cherry Tomatoes

Chives

Parsley

Basil

Dried Oregano

Mascarpone Cheese

Extra virgin Olive Oil

Balsamic Vinegar

Salami Milano

Mortadella

Provolone Cheese

INSTRUCTIONS

For one large Sandwich, to serve between 4-6 people, place 1 baby gem Lettuce on a chopping board.

To this add, a small handful of Spinach, and a spring Onion.

Next, 2 florets from a Pepper, a small handful of Olives and a small handful of Jalapenos.

Then, around 5-7 Cherry Tomatoes, a small handful of Chives, Parsley and Basil.

At this point, add 2 Tbsp of Mascarpone Cheese.

Lastly, 4 slices of Mortadella, and between 6-8 slices of Salami Milano.

Finish with a pinch of dried Oregano, a drizzle of extra virgin Olive Oil and Balsamic Vinegar.

Season with Salt and Pepper.

Then, using 2 very sharp knives, chop all of the ingredients together until you almost have a really coarse Pate, or spread.

Then, take your Bread of choice, cut it in half, remove a little bit of the filling so you have more space inside the Bread.

To finish, spoon in the Sandwich filling, cut the Sandwich into portions, and serve.
