Cheesy Jacket Potatoes
INGREDIENTS
Baking Potatoes
Cheddar Cheese
Parmesan Cheese
Smoked streaky Bacon
Dijon Mustard
Crème Fraise
INSTRUCTIONS
Start by rubbing the Potatoes in olive oil and stab with a fork.
Then, place them into an oven and bake for around 45 minutes.
While the Potatoes bake add the streaky Bacon to a frying pan and cook until crispy.
Remove the Bacon from the pan and pop to one side.
Take the Chives and finely dice before placing into a bowl ready to garnish the Potatoes.
Once the Potatoes are ready cut a square out of the top and remove the skin, exposing the fluffy Potato inside.
Scrape out the Potato, place into a bowl and pop the Hollowed out skins to one side.
Finely dice up the crispy Bacon and add a handful into the Potato.
Add a good grating of Cheddar Cheese, a grating of Pecorino Romano along with a flat Tbsp of Dijon Mustard and the same amount of Crème Fraise.
Season, and mash the Potato until smooth, then stuff the filling into the hollowed out Potato skins.
Place the Stuffed Potatoes back into the oven for another 20 minutes.
Once the Potatoes are done, pop them on a plate and sprinkle with the Chives, and more of the Bacon.
Leave the Potatoes to cool for 2 minutes as they will be very hot, and serve.
