Venison Steak
INGREDIENTS
Venison Steak.
Butter.
3-5 cloves Garlic.
Bunch of Rosemary.
Bunch of Time.
INSTRUCTIONS
Pop a frying pan on the hob and turn the heat up high.
Leave the pan for a few minutes to get very hot.
Season the Venison Steak liberally with Salt and Pepper.
Take 3-5 cloves of garlic and give them a smash with the back of a knife, but don't peel them.
Add a splash of Olive Oil to the pan, and as soon as you see a light smoking from the Oil, lay in the Venison.
DONT TOUCH the Venison Steak for 1 minute while it sears on one side.
After 1 minute turn the Steak and leave it for another minute on the other side.
After another minute turn for a second time and throw in a generous knob of Butter, a handful of the Rosemary and Thyme, and pop in the Garlic.
Baste the Venison with the Foaming Butter for 2 minutes, but adjust the time of cooking for your preference.
For an inch thick Venison Steak - Rare 3-4 minutes, Mid-Rare 4-5 Minutes, Medium 5 Minutes (these times are approximate)
Remove the Venison and leave it to rest for 7 minutes, then serve.
