Roasted Tomato & Burrata Tagliatelle

INGREDIENTS (for 2-4 people)

300g dried Tagliatelle
1 Burrata
400g Cherry Tomatoes
1 Large Onion
3/4 cloves of Garlic
175ml glass of white Wine
Bunch of fresh Basil
Parmesan

INSTRUCTIONS

1. Preheat oven to 180 degrees.
2. Pop an oven proof frying pan on a medium heat and add Olive oil.
3. Chop your Onion into big chunks.
4. Throw onion in pan.
5. Crack 4 cloves of Garlic with the back of a knife.
6. Chuck the Garlic in the pan.
7. Add the cherry Tomatoes to the pan and roast for 5 mins.
8. Pop the pan in the oven for 40mins until nicely roasted.
9. Stick the pan back on the hob on a high heat.
10. Deglaze the pan with white Wine & reduce.
11. Pour the contents of the pan in to a blender and blend until smooth. 12. Pop a sauce pan of salted Water onto a high heat.
13. Bring to the boil and add Tagliatelle.
14. Cook for 2mins less than stated on the packet instructions.
15. Drain Pasta and pop in a frying pan with a splash of Pasta Water and some of the sauce.
16. Mix everything together, plate and finish with Parmesan and finely chopped Basil.
