Nacho Wrap

INGREDIENTS (makes 3-5 wraps)

Tortilla Wraps
80-100g Tortilla Chips
400g can Chilli con carne
2-3 Tsp smoked Paprika
400g Cheddar Cheese
1-2 Tbsp plain Flour
1-2 Tbsp Butter
2-3 pints full fat Milk
170g Guacamole
180g Salsa
160g Sour Cream
1 Handful Coriander
3-4 Tbsp Jalapenos


INSTRUCTIONS

Pop a Dutch oven/sauce pan on to a medium heat and add 1-2 Tbsp of Butter.
As the Butter melts add 1-2 Tbsp plain Flour and mix into a paste.
Slowly pour in the Milk and stir until you have a thick white sauce.
Grate 400g of Cheddar Cheese into the Sauce and stir until the Cheese has melted, you will have a very thick Cheese sauce.
Add the can of chilli to a sauce pan and go in with 2-3 Tsp of smoked Paprika.
Heat through the Chilli.
Build the Nachos in layers adding some Nacho chips to a plate then 2-3 Tbsp of Chilli.
Next add 1 Tbsp of sour Cream, 1 Tbsp of Salsa and 1 Tbsp of Guacamole.
Next, scatter over some Jalapenos (as many as you can handle)
Finish with 3-4 Tbsp of the Cheese sauce, then repeat layer by layer.
To finish, finely chop the Coriander and scatter over the Nachos.
Now you have your Nachos, take a Tortilla Wrap and fill with a pile of the Nachos and fold into a wrap.
Use tin foil to hold the Wrap together if you wish.
