Grate your Cheddar Cheese into a bowl and cut off 2 slices of your Bread (about half an inch thick)
Spread the goats Cheese onto the inside of the Bread and pile in the Cheddar, you can use as much Cheese as you like for this Sandwich.
Grate over a liberal pile of Pecorino Romano and pop the lid on the Sandwich.
Leave the Sandwich to one side while we cook the Onions.
Slice up your red Onions into thin strips.
Pop a frying pan on a medium heat and add a splash of olive oil.
Chuck in the diced Onions.
Season the Onions and fry until soft and caramelised.
Once the Onions are caramelised add a tbsp of Honey. Stir the Onions until the Honey has caramelised.
Deglaze the Onions with a good splash of Balsamic Vinegar and reduce to a sticky syrup.
Set the Onions aside for a few minutes while we grill the Sandwich.
Clean out the pan and generously Butter the outside of the sandwich.
Pop the pan on a medium heat and lay in the Sandwich.
Toast the outside by turning every 2 minutes and pressing down with a spatula.
Keep checking the inside to make sure the Cheese melts.
Once the Cheese inside is melted and gooey, and the Outside is golden brown, toasted and crispy, grate over some Pecorino Romano and flip the Sandwich to toast the Cheese, repeat until you have a Cheese crust on the Sandwich.
Serve the Sandwich with a nice spoon full of the Onions.
