Breakfast Burrito
INGREDIENTS (makes 4/6 Burritos)
1 Lrg Onion
2/3 cloves of Garlic
2 Chillies
400g Sausage meat
6 rashers of streaky Bacon
2 Lrg handfuls of Kael
2 Lrg handfuls of Spinach
Worcestershire sauce
4/6 Eggs
120g cheddar Cheese
6 Tortilla wraps
INSTRUCTIONS
Place a frying pan on a medium heat and add 6 rashers of streaky Bacon.
Cook the Bacon until crispy and remove from the pan.
Place a frying pan on a medium heat and add a splash of Olive Oil.
Finely dice your Onion and pop in the frying pan.
Season the Onion with sea salt and sweat down until soft.
Slice up your Chilli, leave in the seeds and add to the Onions.
Finely dice up the Garlic and add to the pan.
Remove the Sausage meat from the skins and mash up with a fork.
Add the Sausage meat to the pan and fry until caramelised and brown. Deglaze the pan with the Worcestershire sauce and reduce.
Throw in 2 handfuls of Kael and 2 handfuls of Spinach.
Stir through the Kael and Spinach until they have wilted down, then turn off the heat.
Add 4/5 Eggs to a mixing bowl and grate in 120g of cheddar Cheese.
Mix the Eggs and Cheese and pour into a sauce pan on a low heat. Slowly cook the Eggs until creamy, then turn off the heat.
Add the Sausage mix to a Tortilla wrap and spoon over some of the Eggs.
Quickly chop up the Bacon into pieces and sprinkle over the Eggs.
Fold and roll the wrap into a Burrito and serve.
