Omelette au Fromage
INGREDIENTS
Eggs
Butter
Gruyere Cheese
Chives
INSTRUCTIONS
Grate the Gruyere Cheese into a bowl so it is ready to go.
Take the Chives and dice them up really fine, stick them to one side ready.
Pop a good non stick frying pan on a low heat and add a knob of Butter.
Take 3-5 whole Eggs and crack them into a large mixing bowl.
Season with Salt and whisk the Eggs vigorously until they become lighter in colour.
Soon as the Butter starts to foam pour in the Eggs.
Once the Eggs hit the pan, whisk them vigorously as you shake the pan to build up some really fine creamy curds.
After around a minute start to gently tease away the Omelette from the pan and gently fold it over about a third.
Sprinkle a handful of the Cheese onto the exposed curds on the unfolded side of the Omelette.
Gently fold over the other side of the Omelette and leave on the heat for another 15 seconds while you grab a plate.
Lay the plate over the pan and quickly and confidently flip the Omelette onto the plate.
To finish, gently rub the Omelette with some Butter, sprinkle with the Chives and serve.
