Nduja Mac & Cheese
INGREDIENTS
Dried Macaroni Pasta
Nduja Paste
Pecorino Cheese
Cheddar Cheese
Butter
Milk
Flour
Bread
Garlic
INSTRUCTIONS
Chop up the Bread and add it to a blender along with 2 cloves of diced Garlic.
Blend up the bread and chuck them into a frying pan along with a good splash of Olive Oil.
Season, and fry the Breadcrumbs until they are crispy but without too much colour.
Empty the Breadcrumbs out into a bowl and allow them to cool down.
Take a mixing bowl and grate in 400g of Cheddar Cheese and 200g of Pecorino Romano Cheese.
Pop a Dutch oven on a low heat and add a 2 Tbsp of Butter.
Once the Butter starts to melt add 2 Tbsp of plain Flour and cook out for 3 minutes while you stir until you have a paste.
Slowly start adding the Milk as you stir until you have a nice smooth Bechamel, or white sauce.
Throw in the Cheese and stir into the sauce.
The Cheese sauce should be nice and thick, season to taste and leave the sauce on a very low heat while we cook the Macaroni.
Turn on your oven and pre heat to 180 degrees.
Pop a sauce pan of water on a high heat, heavily season the water and bring to the boil.
Add 500g of Macaroni to the water and cook for 1-2 minutes less than the cooking time on the packet.
Drain the Macaroni and add it to the Cheese sauce along with 2-3 heaped Tbsp of Nduja paste.
Mix the Macaroni into the Cheese sauce and Nduja then spoon into a nice deep pie dish and top with the toasted Breadcrumbs.
Place the Mac & Cheese in the oven and bake for 15 minutes and serve.
