Chorizo Burger

INGREDIENTS

Beef Mince (20% fat)

Chorizo

Brioche Burger Buns

Burger Cheese Slices

Onions

Whisky

Sugar

White Wine Vinegar

Chipotle Paste

Eggs

Dijon Mustard

Lemon

Sunflower Oil

Baby Gem Lettuce

Pickled Jalapenos

Baby Gherkins

INSTRUCTIONS

Firstly to make the Burger sauce, we want 2-3 Egg yolks in a blender.

Add a Tsp of Dijon Mustard and the juice of a Lemon.

Next, a splash of some white wine vinegar, around a Tbsp.

Blend together and then slowly start incorporating the Sunflower Oil, add a splash, then blend, and repeat until you have a lovely Mayonnaise.

Add a Tbsp or 2 of the Chipotle paste to the Mayo, and blend.

Pour the Mayo out into a mixing bowl and fairly finely dice up the Lettuce and chuck a handful into the Mayo.

Take a good handful of the Jalapenos, and finely dice them up along with a handful of the Gherkins.

Add the gherkins and Jalapenos to the Mayo, season, and give everything a good stir.

Now the sauce is ready, take the Onions and thinly slice into strips.

Take a frying pan, pop in the Onions with a splash of Olive Oil and season.

While the Onions are caramelising on a medium heat, take a large mixing bowl and grate in the Chorizo, around 200g, then add 250g of the Beef mince.

Massage the Chorizo into the Beef, but gently, we don’t want to compress the mix too much.

Then, take a small handful of the mix and shape your Burger patty’s, make them around half an inch thick.

Once the Burger mix is ready check the Onions, we want them really nice and golden brown.

Add some sugar to the Onions, around a Tbsp, and caramelise.

Then deglaze the pan with a good splash of Whisky, roughly 80ml.

Burn off the alcohol, reduce the Whisky to a syrup and pop in a small splash of white wine vinegar, about a Tbsp.

Place the Onions to one side on a very low heat to keep warm.

Place a frying pan on a medium heat and add a knob of Butter.

Place the Brioche Buns in the Butter to toast.

Once the buns are golden brown and toasted, remove them from the pan, turn up the heat and season the patty’s.

Place the patty’s in the pan and flip after about 45 seconds, then repeat.

Flip the patty’s a third time and after 30 seconds add the Cheese slices.

The Cheese slices will have gently melted after another 30 seconds and now we are ready to build the Burgers.

Place the base of the Brioche buns on a plate, lay on the patty and add a spoon of the Onions, finish with a good dollop of the sauce and serve.
